January is almost over, which means Louisville‘s ever-changing weather is as unpredictable as always. Will it be a snow day? Will we be on a delay? Will we go to school on time? It’s hard to say, but one thing is for certain– breakfast must be served.
But because January is almost over, we have lost the novelty of exciting breakfasts; the longer we can stay in bed, or in our warm shower, the better. We’re lucky to throw a pop-tart in our kid’s hands before shoving them out the door, worried they might miss the bus. It is time for salvation, and it just might be here– introducing Breakfast with Team Panella!
For the planner, we introduce eggs in a cupcake tin:
An easy way to please everyone; you can drop a plain egg in for your picky child, spice it up with sausage and vegetables for your adventurous child, or sprinkle with cheese for the dairy lover. If you’re preparing them for yourself, adding a little variety will break up the monotony of the week. Bonus round: eggs are full of protein, and will give you (and your little one) enough energy to last until lunchtime. Simply preheat your oven to 350, cook for 12-15 minutes, and enjoy in their adorable cupcake form, eat on an english muffin, break into a breakfast burrito, or throw into a ziplock to enjoy later in the week.
For the “I have a minute” morning people, enjoy the breakfast quesadilla:
Again, something that can be done with variety; we’ve seen this done with eggs, sausage, bell peppers, and more, but we love fruit– especially organic strawberries and blueberries from our garden. Warm in a quesadilla maker or a frying pan, and viola! A healthy breakfast that will warm your belly before you face the winter chill. Adding peanut butter to the fuity mix will give you protein to keep you full. Add texture and fiber with a sprinkle of chia seeds, or add an even sweeter note with a dash of chocolate chips.
For our last minute, “running out the door” breakfast eaters, we present to you bananas with honey:
A personal favorite of Team Panella’s executive assistant, bananas with honey are a quick, sweet way to stat the morning. The best part about this treat is that it is literally a grab and go– Jess has been known to walk into the office with a banana and jar of honey, enjoying her breakfast while checking emails. Help your allergies and Keep Louisville Weird by opting for local honey. For variety, you can add peanut butter, or for an indulgent twist, enjoy your morning banana with chocolate hazelnut spread.
